Raw Pad Thai


So, last night I made the pad thai from Ani's Raw Food Kitchen. It was SO good! The recipe making process was... sort of a comedy of missing ingredients, however... We still can't find Kaffir lime leaves. Every single store that carries them is out. I have no idea what they taste like, or how much more awesome this dish would be if they were in it. We also used regular coconuts instead of thai baby coconuts, and I screwed up the measurements because I forgot halfway through the recipe that I was making a half recipe, not a full.

It still turned out amazingly delicious, and I will continue to pester local grocers for Kaffir lime leaves until they come back into stock and I can make these thai dishes for reals.
Only one injury was sustained during the making of this dish - I sliced the %$#* outta my finger on the mandoline.
I did not, however, get any blood in the pad thai.
